Mandarin liqueur
I have just harvested our organic mandarins now that they have reached complete maturation, during the full moon phase, when the maximum amount of essential oils are present in the peel.
Recipe :
Fill a glass jar with freshly picked mandarin peels, add 95* alcohol until they are covered.
Leave them for 3 hours, then filter the alcohol.
Prepare a syrup with sugar, 500g of sugar in 1L of water.
When the sugar syrup is cold, add the extract respecting the proportion of 1 to 1.
Bottle and leave to rest for 2 weeks.
